Made on Paolos small estate in Piemonte from destemmed grapes, fermented in steel with natural yeasts. 10 14 days maceration, pressed, back in steel to finish fermentation. 20% of the juice went into old 500L barrels Tonneau. At 15%, and with the care gone into producing, this wine is a lot of fun.
