Now reaching optimal maturity, the vines are producing some stunning flavours and complexity which once made Yarra Cab king. We feel that we can now produce a wine deserving of the reserve grade. Handpicked 2 tonne were split into 3 fermenters, each with different treatments. One was 100% destemmed (accentuating fruit forwardness), one was 100% crushed (bringing grape
