Chidori Tokubetsu Junmai 3x Daifuku mochiKijoshu means double fermented instead of adding water during a step of the fermentation, sake is added. This results in a sweeter sake. But don't worry, it's not clawingly sweet! It has a nice acidity to balance out the sweetness. In addition, the brewery used their own cultivated yeast from tools they found in the attic that's over 100 years old! The result?
