Trained as an oenologist in Bordeaux, he began consulting for others before starting his own domaine in 1999 with just one hectare. Today, he farms over 15 hectares biodynamically, focusing on low yields, native yeast fermentations, and minimal intervention in the cellar. Sylvain is deeply committed to the expressive potential
